Ever thought of smoking your salmon, fish? We did it a lot, and it works great. This is the unit for you. What you do is build a small fire, put a metal plate or tray over it, and then put alder chips on top. Then you have a drum or hood over it with either trays, grills, or wire to hold the fish fillets. Keep tending the fire until fish are done. You will never buy smoked salmon again! We are moving a long way, and would rather not take the hood with us, but it certainly is a gem.
